Snickerdoodles~My Way

It's been a busy day, which is why I collapsed around three after making a cup of chamomile tea and grabbing two Snickerdoodles. I love those old standards and have, through trial and error, come up with a recipe that is a modification of a number of Snickerdoodle recipes, which I find easier, more healthful, and just as yummy. The recipe is given here so that you may copy and paste or you may simply click on the link for an easy print. 

The changes I've made are using butter (no shortening) and less butter than some recipes call for. I also melt the butter, which means that I don't have to wait for butter to arrive at room temperature and I don't have to bother with the whip the sugar and butter until fluffy bit. Life's too short for all those extra steps.☺ Sugar and cinnamon ratios are much different as well because we prefer less cinnamon.

Vee's Snickerdoodles
Ingredients: 
* 1 ½ sticks melted butter
* 1 ½ cups white sugar
* 2 eggs
* 2 teaspoons vanilla extract
* 2 ¾ cups all-purpose flour
* 2 teaspoons cream of tartar
* 1 teaspoon baking soda
* 1/4 teaspoon salt
                ***                
* 3 tablespoons white sugar
* 1 teaspoons ground cinnamon
Method:
Allow eggs to come to room temperature.  Mix dry ingredients and use whisk to combine. (If using salted butter, do not add more salt.) Melt butter in microwave or on stovetop, add butter slowly to dry ingredients, add eggs, add vanilla. Mix with mixer until well incorporated. Using a cookie scoop, drop formed balls into the mixture of white sugar and cinnamon. This ratio of sugar to cinnamon can be modified to your family's preferences. Ours prefers less cinnamon than normal for digestive purposes.
Bake 9 mins in a 400° oven
Allow to cool three to five minutes on the pan and then remove to a rack. Yield: 36 cookies

Now I'm off to read a cozy...this little murder mystery, which is a long way from my usual reads. I just want to read something light and easy to leave.

  1. I think I need to try your modified version of Snickerdoodles! I just bought a new to me cozy mystery book, too, As the Pig Turns. It's about a murder in a small Cotswold town. My Country Romance Branch book is finally going to be shipped from Amazon (I ordered it before we left for England) and I'll have to have some tea and cookies when I finally break it open. Hope your feet are up and you are relaxing...

  2. When you've a had a long day you deserve to put your feet up with a nice cup of tea, some delicious cookies and a little light reading. enjoy. I made some chocolate chip cookies and I intend to indulge in some nice melty warm ones very shortly :)>

  3. I'm glad someone else takes 2 or 3 recipes for a certain thing and comes up with their own version. I often do this - take the best of all of them and combine. I haven't baked for a while so my cookie jar is empty. Looks like a sweet little book you're going to put your feet up with, enjoy.

  5. Snickerdoodles are my middle sons favorite cookie. I don't think he gets them much anymore!
    I've tried to find a cute knitting series for my MIL, but the ones I've found always seem to have something that might offend this nearly 80 year old lady. Please let me know what you think of this one.

  11. I didn't hear about Snickerdoodles until well into adulthood. I was so taken by the whimsy of the name that I was disappointed by the taste of the cookies and never tried them again. But perhaps this will be the time to attempt it again, knowing that it's just a plain cookie with cinnamon sugar.
    Cozy mysteries are the kinds I like to read. Sometimes I just need something light and fluffy. Enjoy your evening.

  17. I don't make too many cookies and I've never made Snickerdoodles! I made pumpkin scones today when I needed to take a break and watched an episode of Gilmore Girls.

  23. I LOVE Snickerdoodles!!! Thank you for the recipe! I have been reading a 'light' book - by John Grisham of all people. He wrote 'Playing for Pizza' - a light novel about a football playing playing in Italy. I am waiting for a book I bought on eBay by Willie Robertson of Duck Dynasty. That will be our next 'read aloud' book.

  26. That's new to me Vee - never heard of Snickerdoodles in my neck of the woods - I'll give them a go!
    One of our fave biscuits/cookies here is called Hokey Pokey Biscuits - I'll be making a natch at the weekend which I'll try to remember to photograph - then I'll post the recipe!

    That book cover appeals to me too - love anything with a recipe!

  30. Oh Vee, I do love those old classic cookies too! My daughter told me to try five spice powder in the cinnamon and sugar mix (just a little) and it was a nice revelation! Enjoy your mystery and your weekend!

  32. Sounds like a great evening to me! Snickerdoodles were one of the first recipes I copied down and made myself (I'm sure with help:) back when I was in second grade. I still use the same recipe (although the card has had to be recopied several times), but I may have to give your version a try.
