I Challenged BJ to a Duel

What?! Am I crazy?! She's going to lay me out in lavender in no time flat. But, okay, put your dukes up, BJ, let's get this show on the road. ☺(Mixed metaphors much?) 


If you know BJ at Sweet Nothings, and I hope that you do, you know that she is an amazing blogger who excels at food photography. Every time I visit her, I gain a pound. It just so happens that I sent her a little recipe that she tried and enjoyed and that means just one thing: She is going to dress up that little bugger and make it a thing of beauty, which is a joy forever, until, as I mentioned already, you step on the scales. 


Apple Cheese Danish is an old Weight Watchers recipe from the 1960s. My mother, bless her heart, went on Weight Watchers and put the entire family on a diet. We began to look a bit emaciated in about six months time. Anyway, we all loved this recipe because it is a dieter's apple pie...sort of.


~forget the bananas...they are there for interest only a la BJ (course she's gonna use a flower...I think ☺)~

You will need the following ingredients for a single serving:

*an apple
*a piece of bread
*an ounce of cheese
*cinnamon
*sweetener of choice

Okay, that's the recipe for making a legal Apple Cheese Danish; these are the ingredients for an illegal Apple Cheese Danish:

*an apple or two or as many as you think would be tasty
*a few pieces of bread, at least two
*an ounce or two of cheese...who's counting?
*cinnamon
*a pat or two of butter
*sugar or maple syrup, Honey, whatever floats your boat

Method: 

Melt butter in a skillet and add peeled and thinly sliced apples. Add enough water to help the apples stew down and become soft. Sprinkle cinnamon over the top. Very soon, your entire house is going to smell like an apple pie dream. Hmmmm...

Lightly toast your bread. Add that "ounce" of cheese (I have tried American, cheddar, and even cream cheese, but go with what appeals to you). When most of the liquid has simmered off, add the softened apples to the top of your waiting toast and cheese. Then broil until the cheese is bubbly. (I have a toaster oven that makes this easy-peasy.) Hope that you've made a great cup of coffee or tea to enjoy with your breakfast or lunch.

  8. Mmm-mmmm, I am going to have to try this, Vee! I seem to remember making something similar many years ago, only I think it involved cottage cheese. This one looks much more yummy and would make a good meal any time of day. Thanks for sharing. Off to see what BJ does with it!

  9. ahhhhhhh...everyone woke up this morning before me...it's 7:51 here this morning and I am just crawling out of bed...haven't even had that first cup of DD coffee to get my eyes open and my heart a'pumpin'...
    OOO, you did so well on this....and your words are so darling...and I can see a bunch of little kids running around skinny, from all the Weight Watchers recipes your mama made. Oh, no, sweet sister friend, no need to lick wounds...and what fun this was....love you dearly and one day, I so hope we can meet and share this treat of yours....John would have got a kick out of this fun we had together.

  10. oops, and I forgot to say that the juice from these simmering apples is so good that (*shhhh, don't tell anyone)after I poured it all over the toast, I got another little bit of bread and wiped up the rest of the juice in that skillet....delicious...and I am about to have another for breakfast this very morning..

  19. Yummy, yummy!! Love that combination of flavors! We make something similar, but without cooking the apples; they are just very thinly sliced, cinnamon/sweetener on top, cheese over that, then broiled or toasted. It was a breakfast that Ron requested often during his recovery last autumn. I'll have to try your version! I am sure he'll love that too!

  28. I'm reading yours first but I know you're probably right...BJ probably has a flower in her photos! haha! And did you say, Lay me out in lavender? You know...I've never heard that before! But I think I get the 'gist of it'! lol And this looks SO good. I cut up apple in a bowl, add a little water, cin and Truvia and microwave it to make applesauce. This would be EVEN BETTER! Off to Texas now....Hugs!

    I'm afraid to go to BJ's, that woman could make old shoe leather look tasty and sweet talk you into trying it. :-) But I'm going anyway and will make a guess that there might be some whip cream at her place?

  41. This reminds me of my mother telling the story when there wasn't any dessert after dinner, her grandfather would spread butter on homemade bread, sprinkle it with sugar, and pour fresh cream over it. The simple things in life, XOXO

  43. We used to make something similar as children, except it was in a campfire pie iron. We'd put a slice of buttered bread on each side, fill it with softened cinnamon apples and cheese and then squeeze the pie iron sides together and hold it over our gas stove fire. It would come out toasted and sealed like a hand pie. SOOOOOOO GOOOOOOD!!!!
