Take Two of Raspberry Clafouti and Molasses Crisps

Goodness, what is Blogger doing to my pictures? I mean, it was bad enough when we were eating the goods, but they must be fantastic to have Blogger eating the mere images. ;>

Anyway, here's yet another photo and I'll toss in the Molasses Crisps recipe for good measure even though no one has asked. :D



Molasses Crisps

Ingredients:

* 1 cup butter
* 1½ cup sugar
* 1 egg
* 1 egg yolk
* ¾ tsp salt
* 2 cups flour
* 1 to 2 tsp powdered ginger based on preference
* 1 tsp baking powder
* 1/3 cup molasses


Method:

Cream butter (room temp) and sugar for 2 minutes and no longer. Add 1 egg and 1 egg yolk, and salt.

Whisk together flour, powdered ginger, and 1 tsp baking powder. Add alternately to creamed mixture with molasses.

Roll into balls and roll in coarse sanding sugar (regular also works).

Bake at 350° for 12 minutes. (Do not overbake as these are a crispy on the outside and chewy on the inside cookie.) Allow to cool for 5 minutes before removing to racks.

For those of you who are even thinking about clafouti, don't hesitate. It's so quick and easy to make and the results are wonderful.

  1. Yummy yum yum! Oh Vee you do keep me chubby with your recipes that I have absolutely no choice but to try! LOL! While the crisp, cool days of Fall aren't upon us here in this corner of the world yet, I'm gonna try them anyway! I'll just turn up the AC! LOL!

    I missed you while I was away :-)

    You've been very busy posting since I left and I tried to catch up with all I missed. Glad you got a new hard drive, chose your Presidential candidate, gave advice about windows, got a tree to decorate and warmed up your kitchen with all these wonderful baked goodies! That photo of John was too funny but I'm glad the traction is helping him!
