Cocoa Cookies

 ~Cookies and Milk~

These cookies have that great crunchy on the outside, chewy on the inside texture. They don't require baking chips or unusual ingredients; a definite plus around here.

Here's the recipe for those who like to copy and paste. The printable version is below.

Cocoa  Cookies

Ingredients:

- 2 cups plus 2 TBS of flour unbleached, unbromated flour (King Arthur's is great or whatever you have)
- ¾ cup unsweetened cocoa powder
- 1 tsp baking soda
- ¼ tsp salt
- 2½ sticks salted butter (melted)
- 2 cups granulated sugar
- 2 large eggs
- 1 TBS pure vanilla extract
- Sugar for rolling cookies and sprinkling on after baking

Method:

- Sift together all dry ingredients
- Melt butter then add to a mixing bowl along with sugar, eggs, and vanilla
- Incorporate well on medium speed
- Add dry ingredients slowly and beat slowly until well incorporated...cookie dough will be soft
- Using a cookie scoop (mine holds 2 TBS), create cookies, gently roll in sugar, and place on parchment-lined cookie sheet.
- Bake at 350°F for 12 minutes
- Allow to cool on cookie sheet for 5 minutes before removing to wire rack for cooling

~Farmer Boy Plate~

This is the sweetest little plate that I served John's cookies on. We purchased them to hang in the living room. A spring planting scene is depicted.

Here's a closer look. I think that I've decided to hang them beside the kitchen sink window on a plate rack—otherwise, I'm going to get so tired of holding them up there. ☺


They're labeled "Pastoral by Taylor Smith & Taylor U.S.A." A Homer Laughlin piece, I believe. Apparently, they were made to give away with Quaker Oats purchases. They are very sweet and charming and meaningful around here as John was a farmer boy.

And there's my lonely little snack mat. I planned to make a set of four. Right. Perhaps I'll try my new method on them and share with you when I get it sorted around.

  1. You make me laugh! Yes, you will get tired holding them, best get a plate hanger! They look delish, how many are left? I did some pre-mades yesterday after noon. I always have them on hand for when the need arrives. Haven't made real homemade cookies in a long time. No. 1 daughter said she was going to yesterday, that never happened so I popped those babies in and in 13 mins. my need was satisfied! Thanks for stopping by yesterday by the way. And nope I've never made a snack mat. Yours looks cute though....joyful actually!

  2. Yes, your hand and arm would get tired holding that plate there! But it's an adorable plate and I love how it reminds you of your hubby. I recently made oatmeal cookies as they are my favorite! Your recipe looks really good and chocolaty. I don't sew so, no, I have never made a snack mat but yours looks really pretty. Enjoy your day.

  5. But if you hold one in each hand ~ straight out from your sides, above your head, move your arms in circles...you've gotten your daily exercise and can eat another cookie! Great plan, right?!!

    The plates are beautiful. My mother's first china was Homer Laughlin and she loves it to this day. This pattern you found is not only pretty, it tells a special story.

    I'm just learning about snack mats from you. I like the different stitches. You made it?

  6. I'm up too...it is 5:45 am here. It's a babysitting morning for me so I like to be able to read a bit before they come tumbling in the door.

    Those cookies look great...and I like how you put the recipe on a google document so that it could be printed off. Almost every other day someone says our print button does not work.

    That mat...is amazing. I love it! I am going to keep this idea tucked away for my next spare time. :)

  8. I've made a mug rug...does that count? And I made a birthday cake for my mother in law this week out of the dark chocolate Hershey's cocoa. My hubby ate some and said it was yummy! I remember getting dishes in the oats..what a nice memory!

  9. Yum, cookie! You needed to make something like that for your sweetie, after all the hard work he's been doing! I adore those dishes. The green color is perfection too. Our main dishes are the Villeroy & Boch Naif pattern, which also has charming country scenes. I never tire of it!

  12. A snack mat! What a great idea! - although I think what I most often need is a snack bib to catch the crumbles!

    I've seen the pattern on your sweet plate before, but never with the white border. They match your wall color perfectly.

  13. Yummy sounding cookies. They might be my next baking project. In fact, I think I'll take the butter out of the fridge before heading off to school.

    I've never made a snack mat, but what a great idea! I think you should definitely do a tutorial.

    I laughed at you saying you should hang the plate in the kitchen so you wouldn't have to hold it there. Sometimes it takes awhile to get a good photo, doesn't it?

  14. Why can't we get prizes like that lovely plate or pretty flour sack material or something useful in our purchases? I remember getting happy meals toys in my kids hamburger purchases and thinking "I don't even know what that is!" They didn't know either. My cookie-making has been largely taken over by my 15-year-old daughter, who just last night made Rice Krispy Treats.

    So glad you shared the recipe. I can tell by your description that I would like them. Crunchy on the outside and chewy on the inside ... yum!!!
    The last cookies I made were oatmeal/choc.chip/dried cherries. How I would have loved to find that adorable plate in my oatmeal box.
    No snack mats have been made by me, but yours is charming. A happy way to enjoy cookies and milk.

  18. I adore those plates! And I think cookies taste better when presented on a pretty plate. (They look delicious!)

    Like Angela, I am blessed with a resident baker, but she has been making scones and crème brûlée of late. The last cookies I made...a couple of weeks ago, I made lemon bars. When I offered one to my mother-in-law who was here for dinner, she seemed surprised that I had made them. She had given Kati credit. :D

    (We three girls have been under the weather the past few days, so my husband picked up a package of store bought cookies this morning. Desperate times call for desperate measures, I suppose.)

  21. Chocolate chip cookies last week. They are my 'go to' cookie.....although I seldom eat more than ONE!

    I am printing off YOUR recipe so I can make them for my next hospital run. Nurses, doctors, valet guys, EVERONE loves homemade cookies!!

The last cookies I made were Monster Cookies, only I spread the batter in a half-sheetcake pan and baked them into bars instead. I'm such a cheater! They were still good.

    As for the snack mat, I think it's adorable but I'll probably never make one. I'm just not that industrious. :D

  30. Your cookies sounds just fabulous. I am craving something sweet so badly these days and just have to keep saying no. It may be time to cave and just have a nibble.....
    I make a cream-filled cookie that is super simple and light. The kids eat them as quickly as I can put them on a plate. I haven't seen snack mat before. What a neat idea.

  31. Yep, I think you might get just a little tired of holding them up there...love this cookie recipe- my sister makes these at Christmas. (I've been on this diet so long, I can only vaguely remember what a cookie tastes like!)
