Found: One Chicken Casserole Recipe

Yes, along with at least three other chicken casseroles. (This post is completely intertwined with yesterday's so if you find yourself wondering what's going on here, besides not much, that explains it.) Several recipes have been printed out multiple times. I think I could be much more organized if and when I get this book together. Someone asked if I have these on the computer and the answer is yes, in triplicate. I don't have a laptop, though, so don't much thrill to running up and down the hall to look for the next ingredient or to print it off again. Some fine day, I'm certain that I will may get it all together.

Anyway, since you asked, and you won't be disappointed, and IF you make this one I really, really do want to hear about it, here ya go.

Vee's Creamy Chicken Casserole for Four

Ingredients:

* 2 cups dry whole wheat noodles. (We prefer Heartland Rotini, but you use what you like.)

* 1 can cream of chicken soup (mushroom in a pinch)

* ½ cup milk (we use skim)

* 1 cup grated cheese (we like cheddar)

* ½ tsp poultry seasoning

* ¼ cup mayonnaise

* ¼ cup plain yogurt

* One cooked chicken breast cut into small chunks or a 12.5 oz can of chunk white chicken rinsed and drained well (we don't need all that salt)

Method:

* Heat oven to 350°

* Boil noodles of choice until done and drain

* Add milk, yogurt, and mayonnaise to the soup and heat until it just begins to bubble

* Add seasonings (you can play around here...we've settled on the poultry seasoning as our favorite)

* Stir in half of the cheese until melted

* Add the noodles and cooked chicken and stir to coat completely

* Spoon into a casserole serving dish suitable for four servings

* Sprinkle with remaining cheese

* Bake in a 350° oven for 30 minutes.

Serve with a vegetable or salad and enjoy!


You'll find that this recipe is a wonderful one to tweak. It can easily be doubled or even tripled, but since we are watching our portions around here and there are only two of us, I usually stick to the smaller recipe. This or that can be substituted. Please let me know what you come up with if you give it a try.

For dessert, I made a delicious Peach Dump Cake. It's another recipe that's fun to tweak. I substituted a can of Comstock cherry pie filling because I didn't have two cans of peaches. It's a peachy cherry delight...hmmmmm. Whaddya mean that we're on some diet? :>

    And speaking of yummy, please tell what delicious topping you put on the Dump Cake? Mmmm, looks almost like Hard Sauce...

  4. That casserole sounds yummy.

    Have you seen the cake recipe I just added to the recipe blog?

    The cake part is made with one pkg. chocolate cake mix, one can cherry pie filling, almond extract, and two eggs!

    Kind of a frosted dump cake. :)

    Hey, anything with chocolate and cherries has to work.

  6. Both of these recipes sound delicious to me. Hey, I'm impressed that you get them printed off. I see so many recipes that I want to try in blogland and don't always print them right away and then it's a real challenge to remember where I saw them in the first place. lol.

  8. Yum...sounds so good! I made a tuna noodle casserole similar to your recipe, by mixing all together one pound cooked egg noodles, 1 can cream of mushroom soup, 1 cup of milk, 2-3 cans of white tuna, one cup grated cheddar sheese and then top it all off with bread crumbs and bake till hot. My kids always loved that dish when they were growing up!

    The peach/cherry dump cake looks yummy too -- like a cobbler.

    I know what you mean about computer recipe printoffs and clippings from newspapers and magazines... I have so many I'll never be able to organize them all neatly. I write my very favorites on index cards and keep them in a little file box so they don't get lost.

    Love the new header photo and the font you used makes your name look like it is all lit up!

  11. OK, that's it - you are an enabler.. You must know I don't cook..well..I CAN I just choose not to..but this sounds good enough for even me to try ... And the Peach Dump cake? You are a cruel, cruel woman, Miss Vee..(she says as she wipes drool off of her keyboard..)

  14. Yummm! It sounds good and I would make it tonight except I don't have any plain yogurt - I have vanilla flavored. But I'll keep it and make it another day. I make dump cake all the time! Always comes out delicious and couldn't be easier!
