The Moon, Banana Bread, and Poetry ;>

Did the moon wake you last night?

The moon woke me. The bedroom was bathed in cool light, which means that I need some blinds. I even took a picture. Since the taking of the picture floated back to me through fog so thick that I would be doing well to remember my name this morning, I was surprised to find that the moon is actually in the shot. Bad shot. In fact, there are two points of light...one must be the flash reflecting from the glass, and the other a nondescript, tiny orb way up high. I should read up on taking photos of the moon. I didn't even attempt to take a photo of the eclipse; although, I did see it and marveled at its beauty.

Late yesterday afternoon I baked a Banana Yogurt Bread and, just like clockwork, I had a call from a friend who asked if the coffee pot was on. We enjoyed a pleasant time visiting, but the bread seemed to take forever to bake. I've adjusted the recipe accordingly.




Ingredients:

* ¾ cup Canola oil

* 1½ cups sugar

* 2 eggs

* 1 TBS vanilla

* 1 cup plain yogurt

* 2 or 3 ripe bananas mashed

* ½ tsp salt

* 2 cups King Arthur flour (unbleached, unbromated)

* ½ tsp baking soda (NOT baking powder as you see in the pic)

Method:

Mix the first 5 ingredients until smooth adding the mashed bananas last and stirring in.

Combine the flour, baking soda, and salt and stir well before adding to the first mixture. Stir until just blended. Do NOT overmix.

Place in a large loaf pan filling two-thirds full and bake @ 350° for an hour or until a cake tester comes out clean. Allow to cool for 5 minutes before turning out to cooling rack.

It's so cold today after much milder temperatures earlier in the week. A friend emailed me this little poem a few days ago. I attempted to track it down; apparently, it's a forward and any state/province can be plugged in. Let's see, shall we?

When the snow's up to your butt
You take a breath of winter
And your nose gets frozen shut.

So I guess I'll hang around
I could never leave my Michigan

'Cause I'm frozen to the ground!!

    So glad you had a nice visit with your friend! And about the moon pictures...when you figure it out pass the info on to me. I never can get a good shot of the moon! Have a great day!

  5. Nope, didn't see the moon, or the eclipse.

    By some calendars, tonight is the Full Snow Moon. But some say it was last night. ????

    All I ever get {from moon pics} is a tooooo small white dot. :-( Yet some take gorgeous photos of it. -sigh-

    Re: your comment in my entry... No, those plates aren't mine. I have no collections of anything, actually. Other than the books of 2 fav authors. All those pics, in that entry, are from the 'Picture Source', which I put at the bottom of the entry, in a click-able link.

    Unfortunately I slept right through the moon, although it is once again cloudy and raining here so it was probably tucked behind the clouds.

  8. Vee, it was cloudy over texas last night. Today it's raining- at least in east and s.east Texas. Banana bread looks great... i think I have some very ripe ones at home. I add chopped pecans to mine. AND I love to eat the batter! Especially with good ole Mexican vanilla in it. (I always put extra vanilla & butter. yummO!)

    Hey, do you do the Fly-Lady thing? I looked at the website and it looks very organized. Can I be that organized? I don't know. I'm either all over the place getting sidetracked or have so much to do that I just don't do anything at all - that frustrates me! Vickie

  11. I also have trouble taking moon shots.
    I love banana bread and mine always takes longer to bake than the recipe says.
    Enjoy your bread this evening.
    I am going to have some ice cream in a little while. :-)
    Cold here too. We are supposed to be getting another of those ice storms tonight and into tomorrow.

  14. I love the poem. Illinois fits in there very well. The eclipse was beautiful but it always seems to happen in the middle of winter when it's too cold to stand outside and really enjoy the show.

    We had such a wonderful view of the moon last night & I even got my hubby to stop the car so I could take some photos. They would have needed more than a thousand words as an explanation however...so I deleted them. There must be a skill to taking moon shots.

  16. Your bread looks delicious. Isn't it funny about baking soda/baking powder, so easy to confuse even after cooking for years. I have learned to always double check, reading the recipe and reading the label. You wouldn't believe how often I've caught myself about to use the wrong thing.

    it will surprise our friends, since i rarely
    bake. they may even be afraid to eat it.
