Rhubarb Squares



Rhubarb Squares

Crust
1-1/2 cups AP flour (ETA: AP=all purpose)
3/4 cup butter, melted
1/4 cup finely chopped walnuts

Filling
1 cup sugar
3 tablespoons cornstarch
2 tablespoons water
4 cups chopped fresh or frozen rhubarb

Topping
1 cup heavy whipping cream
2 tablespoons confectioners sugar
1 cup miniature marshmallows
1-1/2 cups cold milk
1 package (3.4 ounces) instant vanilla pudding mix
1/4 cup flaked coconut, toasted

In a small bowl, combine the flour, butter, and walnuts. Press into an ungreased 13 in. x 9in. x 2in. baking dish. Bake at 350 for 20-25 min, or until lightly browned. Cool on a wire rack.

In a large saucepan, combine the sugar, cornstarch, water, and rhubarb until blended. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until rhubarb is tender. Cool; pour over crust. Chill.

In a large mixing bowl, beat cream until thickened. Add confectioners sugar and beat until soft peaks form. Fold in marshmallows. Spread over rhubarb layer.

In a small bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Spread over cream layer; sprinkle with coconut. Cover and refrigerate for 4-5 hours or until set. Remove from refrigerator 30 min. before cutting.

Hope that everyone had a great weekend! This dessert was served at our bbq and it was so delicious, light (a relative term), and refreshing that I wanted to share. My son made it...boy, did I ever train that boy right! My daughter-in-law says that the recipe comes from her Taste of Home magazine and that, although it looks complicated, it's very easy.

ETA: I am woefully behind on blog visiting and I'm missing you terribly. Hope to be in touch before day's end. It's off to the nursery for flowers, mulch, and dirt. Yippee!

  1. Yummy! I wish I had a slice to go with my coffee. Love your blog. I grew up in Indiana and we had lots of rhubarb. I didn't appreciate it as a kid, but now love,love,love it!

  8. Oh sigh... We have Rhubarb but we're afraid to pick much. It nearly died out last year, but came back this spring. E. thinks we should treat it like brand new... You let newly planted Rhubarb just grow and don't pick it... till the following year...

  10. Yummy and Yipee indeed! I have bedding plants still in the little plastic containers waiting to spread their roots, no can do, it is raining cats and dogs here!

  13. Oh my goodness, Mom and I were just trying to decide what to make with our rhubarb, of course we made a pan of dump cake but this looks awesome! I wish I was with her now...I'll pass it on to her :)

    I'll have to admit that I'm not crazy about rhubarb, but perhaps the marshmallows will make it palatable.

  19. WOw, how great that looks...I swear, I'm going to try growing rhubard again! We had great success with it in England, it may be too hot here, but I'll buy it its own umbrella to shade it...

  20. Well jiggle my cellulite! Rhubarb is my ultimate favorite flavor for pies, jellies etc. I always am searching for new yummy recipies to use it in as they are hard to come by. Vee, you just made my day complete!

  24. Linds, AP flour stands for all-purpose. I had to ask as well...

    Barbara, how about substituting some toasted walnuts instead of the coconut. I don't think it would change the flavor much...it's really good.

  25. I made the rhubarb squares yesterday for our evening church business meeting..it was a special evening as we honored our pastor's 10th anniversary at our church. I had so many compliments on the dessert! Thanks so much for the great recipe.
